Rich and I both love broccoli, so when I saw an easy recipe online that revolved around broccoli, it was a no brainer. We mostly followed the recipe with a few minor edits. We used fresh broccoli, added a pinch of salt and instead of making patties as was instructed, we made balls.
Next time we would like to make our own bread crumbs, and try a mixed variety for the cheese. Cheddar goes great with broccoli, but adding something else might ’adult-up’ the flavor a little. We talked about adding a little smoked Gouda or Munster, or maybe some healthier mozzarella.
Broccoli Cheddar Balls
Oven 375, grease cookie sheet
Makes about 3 dozen balls
- 1 head broccoli (can substitute a bag of frozen broccoli)
- 1 cup Italian bread crumbs
- 1 ½ cups shredded cheddar cheese
- 3 eggs
- Pinch salt
Step 1. Cut broccoli into small pieces, removing most of the steams.
Step 2. Cook broccoli and drain. (we steamed ours)
Step 3. Put in bowl and add in the bread crumbs, cheddar, eggs and salt.
Step 4. Roll into small balls (we went with shooter marble sized balls) and place on greased baking sheet.
Step 5. Bake for 12-15 minutes.
