Krista’s No Joke Chocolate Chip Cookies

I make a pretty amazing chocolate chip cookie.  I tweaked a bunch of recipes over the years until I was completely happy and here it is for your baking pleasure.

Ingredients:

  • 2 sticks butter (SALTED)
  • 1 ½ cups brown sugar (I prefer light but dark works just as well.  You do not want to use super old brn sugar that’s hard and clumped up)
  • ½ cup granulated sugar
  • 2 eggs (room temp)
  • 2 ½ tea vanilla (the real stuff)
  • 1 tea sea salt
  • 1 tea baking soda (check the expiration date, or if it’s been open for over a year, get a new one)
  • 1 ½ tea baking powder (same thing as with the soda above)
  • 3 cups all purpose flour
  • Chips/nuts, etc.  (I like a mix of walnuts, peanut butter chips, mini chocoloate chips and regular sized dark chips).

Oven 360

Step 1. Put the butter in a bowl and microwave it for about 15-20 seconds so it’s just softened but not melted.

Step 2. Add the brown sugar and pop back in the microwave for another 15-20 seconds, until the butter is just melted.  This helps break up the brown sugar a little.

Step 3. Add the white sugar and mix until fluffy.  About 3 minutes.

Step 4. Add both eggs and the vanilla and mix for another 2 minutes until completely combined.

Step 5. Add the baking soda, powder and salt and mix for about 30 seconds to combine.

Step 6. Add the flour a ½ cup at a time and mix it until completely combined before adding the next ½ cup.

Step 7. Add the chips and mix using a spoon.

Step 8. Put in the refrigerator for 1 hour – 3 days.  You can make one pan at a time so you have fresh cookies or make them all at once.

Step 9. Scoop up cookies in your desired size.  A large ice cream scoop ball needs to bake for about 9-10 minutes until just barely getting a little browning on top.  Return the dough to the fridge between baking sessions.  The cookie sheets should NOT be hot when you put the cookies on them.  Allow cookies to cool for 2+ minutes on sheet before removing.

Tip – if you cookies come out flat you most likely either have OLD baking soda or powder, you didn’t beat the mix enough at the start or you beat it too much at the end.
