I have been in the mood for strawberries lately and we were going to a friends for dinner so I thought I would make some strawberry cupcakes for desert. The icing recipe I tried was way too thin and runny. It was like pouring pink water on the cupcakes. At first I felt a bit defeated and was really not happy about it. But then I decided to try something different, and I edited it a bit to make it just a little thicker, although still too thin to spread, and then I decided it would work great as a drizzle instead of an icing. The end product came out great.
I used fresh strawberries of course.
Strawberry Cupcakes
Oven – 350
Ingredients:
- 1 ½ Cups All Purpose Flour
- 1 Tea Baking Powder (make sure its fresh)
- ¼ Tea Sea Salt
- 1 Stick butter (unsalted, room temp)
- 1 Cup Sugar
- 1 Whole Egg (room temp)
- 2 Egg Whites (room temp)
- 1 Tea Vanilla Extract (real stuff)
- 1 Tea Almond Extract
- ½ Cup Milk
- 1 Cup diced or pureed strawberries
- ½ – 1 Cup Mini Chocolate Chips (optional)
Step 1. In a small bowl mix the flour, baking powder and salt. Sit to the side.
Step 2. Cream the butter with a hand or stand mixer, add the sugar and mix some more.
Step 3. Add the eggs and extracts and mix a bit more.
Step 4. Add in the flour mix, mixing as you go.
Step 5. Add the milk and strawberries and mix until combined.
Step 6. Optional – stir in the chocolate chips.
Step 7. Spoon the batter into the cupcake papers and bake 19-22minutes.
Strawberry Drizzle
Ingredients:
- 1 – 8oz package cream cheese (room temp)
- 1 ½ sticks unsalted butter (room temp)
- 1 cup diced or purred fresh strawberries
- 3 cups confectioners’ sugar
- 1 cup marshmallow fluff
Step 1. Mix up the cream cheese, butter and marshmallow fluff until well combined and fluffy. Maybe 2-3 minutes.
Step 2. Add the strawberries and mix until combined.
Step 3. Add the sugar in ½ cup increments, mixing as you go until combined.
The result should be a runny icing.
Unwrap a cupcake and place in a small dish or on a small plate. Spoon or pour some drizzle over the cupcake until covered.
Optional: sprinkle with mini chocolate chips and garnish with a strawberry.
